Yogurt Avocado Dip

Delicious as a dip for vegetables sticks and tortillas chips, as well as a topping for tacos and quesadillas. Makes 2 cups.

Ingredients

1 medium avocado
½ to ¾ cup plain Tree Island Yogurt
¼ cup minced cilantro
1 large or 2 small green onion, minced (about 3 tablespoon)
2 tsp fresh lemon or lime juice
¼ to ½ tsp fine sea salt, or to taste
½ to 1 tsp mild hot sauce, or to taste

Method

Cut the avocado in half, remove the pit and scoop the flesh into a bowl. Mash avocado with a fork until roughly pureed.

Stir in yogurt, minced cilantro, minced green onion, lemon or lime juice, salt, and hot sauce and stir to combine everything well. Taste and adjust seasonings as necessary. You may need to add more yogurt, salt, lime juice, and hot sauce to suit your taste.

Serve immediately, or transfer to a container, press a piece of plastic wrap directly on the surface, close lid and refrigerate up to two days.
