Sprouted Bean Salad With Yogurt Dressing

A fresh spring salad. Serves 4.

Ingredients

Dressing

¼ cup plain yogurt
1 tbsp olive oil
2 tsp apple cider vinegar
½ tsp honey
½ tsp cumin
¼ tsp salt

Salad 

1½ cup quarter and sliced cucumber
1½ cup quartered cherry tomatoes
1½ cup Eatmore mixed bean sprouts
½ cup thinly sliced radish
¼ cup finely chopped green onion
¼ cup chopped basil
⅛ cup chopped mint

Method

Whisk dressing ingredients together in a small bowl. Set aside.

Combine salad ingredients in a serving bowl. Toss with dressing up to ½ hour before serving for best results. Enjoy!
