French Toast Casserole

Ingredients

French Toast

1 large loaf of French bread
8 eggs
1 cup yogurt
¼ cup milk or orange juice
zest from one orange
pinch of salt

Pistachio Crumble Topping

½ cup pistachios
1 cup rolled oats
2 Tbsp flour
pinch of salt
2 Tbsp candied orange peel from Gathering Place Trading
¼ tsp ground cardamom from Gathering Place Trading
¼ cup butter

Instructions

Rip or cut bread into chunks. In a large bowl, mix all the wet ingredients for French Toast. Add the bread and push down to submerge. Allow to soak for 20 minutes to one hour. 

While the bread is soaking, prepare the topping and preheat oven to 350°F. Toast pistachios then either chop with a knife or pulse in a food processor to a rough texture. Combine with everything except butter. Crumble in the butter and bring it all together.

Pour bread mixture into a lightly greased casserole dish. Loosely spoon crumble over top.

Bake for 45–50 minutes. The bread should bounce back and not squish. If the crumble is browning too quickly, cover with aluminum foil.

Let sit for 5 minutes and serve warm.
