Savoury Breakfast Muffins


4 eggs

1 cup Tree Island Plain Cream Top yogurt

1/2 cup crumbled feta

1/2 cup cottage cheese

1/2 cup olive oil

2 tbs chopped fresh herbs (dill, mint, rosemary, oregano, thyme)

3/4 cup rolled oats

1 cup flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon pepper



Preheat oven to 350 degrees.

Spray 12 standard muffin cups with cooking spray.

Mix all dry ingredients.

Combine all wet ingredients in a separate bowl.

Stir wet ingredients into dry ingredients just until moistened.

Spoon batter into prepared muffin cups.

Optional: sprinkle sesame, flax, sunflower or pumpkin seeds on top.

Bake for 30 minutes.

Let the muffins cool in the tin for 10 minutes before removing.
